Signature Class – “Learn To Make Croissants”

Learn the classic method for these iconic pastries, plus adjustments for baking them at high altitude.

Course Description

Learn everything you need to know about baking these ethereal French pastries at home, at high altitude!

This class is taught by Leah Johnson, owner / baker at Le Petit Croissant and author of the award-winning cookbook, “French Brunch At Home.” Leah’s flagship class teaches all about laminated dough, the right type of butter to use, adjustments required for success at high altitude, and much more.

This is a hands-on, small-group class with plenty of personal instruction. Everyone enjoys a personal baking station — there’s no doubling, tripling, or quadrupling of students at mixers. Snack on fresh croissants and jam from Le Petit Croissant during the class break, and browse a selection of jams available for purchase.  Take home the 8 gorgeous croissants you bake in class, plus dough that you can either freeze or bake into 16 fresh croissants the next morning.  Take home TWO DOZEN croissants in total, and enjoy croissants in class! (Retail value of croissants: $91.00)

IMPORTANT! The dough you take home requires 10 minutes of attention every hour for 3 hours following the class.  Additional minor attention is required the next morning.
