“Brie en Croute” and All About Puff Pastry: Party Foods

In this class you’ll learn how to use Puff Pastry to turn a humble wheel of creamy Brie cheese into a visually stunning and delicious appetizer that will become your signature dish. You’ll also make your own puff pastry to take home for future party appetizers!
In this class we’ll take the mystery out of handling, storing, purchasing, and – most importantly – making Puff Pastry, that golden and flaky staple of French sweet as well as savory dishes. We’ll also talk about what type of Brie cheese to purchase.
Then, select from a range of delicious and flavorful fillings and prepare your cheese and pastry for baking!
Time permitting, we’ll also make an “amuse-gueule,” one of those tiny but perfect appetizers sometimes brought by French chefs to your table (at no charge) in advance of the meal.
Students take home a warm (or frozen) “Brie en Croute,” a batch of Puff Pastry you’ve made in class, and the recipes for both.
